Gummy Bear Lemonade Jelly Cups (Printable)

Clear cups filled with lemon jelly and gummy bears, chilled until set and finished with mint and lemon slices.

# What You'll Need:

→ Jelly layer

01 - 1 cup freshly squeezed lemon juice
02 - 1 cup water
03 - 1/2 cup granulated sugar
04 - 3 envelopes (about 3 tablespoons) unflavored gelatin powder
05 - Zest of 1 lemon

→ Gummy bear layer

06 - 1 cup assorted gummy bears

→ Decoration (optional)

07 - Fresh mint leaves
08 - Lemon slices

# Method:

01 - Combine the lemon juice, water and granulated sugar in a small saucepan. Evenly sprinkle the gelatin over the surface and let it sit for 2 minutes to bloom.
02 - Warm the saucepan over medium heat, stirring constantly until the sugar and gelatin fully dissolve; avoid boiling. Remove from heat and stir in the lemon zest.
03 - Place 10–15 gummy bears into the base of each clear serving cup so they are evenly distributed.
04 - Carefully pour the warm lemonade gelatin mixture into each cup, covering the gummy bears and filling the cups to the desired level.
05 - Allow the cups to cool at room temperature for about 10 minutes, then transfer to the refrigerator and chill for at least 2 hours or until fully set.
06 - Before serving, optionally top each cup with fresh mint leaves and a lemon slice for presentation.

# Expert Pointers:

01 -
  • You get all the retro fun of gummy bears suspended in a silky, lemonade-infused jelly just like the viral videos—except homemade tastes better.
  • It's almost impossible to mess up, and the visual effect is always a crowd-pleaser at birthdays and picnics.
02 -
  • If you rush the blooming or overheat the mixture, the jelly turns out grainy instead of smooth—so don’t lose patience here.
  • Swapping in agar-agar for the gelatin lets you make a vegetarian version, but you’ll need to simmer it well and act fast before it sets.
03 -
  • Chill the serving cups before pouring in the gelatin for the sharpest layers.
  • A microplane makes zesting lemons a breeze, and zesting before juicing saves time and knuckles.
