11 - 1 tsp sea salt
12 - 1/2 tsp freshly ground black pepper

# Method:

01 - Preheat the oven to 350°F. Line a baking sheet with parchment paper.
02 - In a large mixing bowl, combine honey and olive oil or melted butter. Add cumin, smoked paprika, cinnamon, cayenne pepper, salt, and black pepper. Mix thoroughly until well incorporated.
03 - Add all nuts to the bowl and toss thoroughly to coat evenly with the spiced honey mixture.

05 - Roast for 18-20 minutes, stirring halfway through cooking, until golden brown and fragrant. Watch closely during the final minutes to prevent burning.

# Expert Pointers:

01 -
  • Theres something irresistible about the sweet-savory balance that makes it impossible to eat just a handful.
  • They transform in minutes from ordinary pantry ingredients into something special enough for gifting in pretty jars during the holidays.
02 -
  • The nuts will seem soft when you first take them out of the oven, but resist sampling until fully cooled—this is when the magic happens and they develop their addictive crunch.
  • Store them only after completely cooled or condensation will form inside your container and ruin the crisp texture youve worked to achieve.
03 -
  • If your nuts start to lose their crispness after a few days, refresh them with a quick 5-minute toast in a 300°F oven.
  • For an even more beautiful glaze, brush the nuts with a little extra honey mixed with a drop of water in the last 2 minutes of roasting.
