# Expert Pointers:

01 -
  • It comes together in 10 minutes with zero cooking, so you can make it while guests are arriving.
  • The herbs stay vibrant and fresh-tasting because you're not cooking them down, just blending them into creamy richness.
  • It works as a dip, a spread, or a sauce—I've dolloped it on roasted vegetables and used it to rescue a bland chicken dinner.
02 -
  • Don't over-blend or the herbs will turn brown and bitter—you want to see flecks of green, not a completely uniform paste.
  • If you make it more than a few hours ahead, the color will gradually fade and the flavor gets quieter; make it the morning of if you can, or the day before at the latest.
03 -
  • Make sure your herbs are truly dry before blending, or you'll end up with a watery dip—pat them with paper towels if needed.
  • If you want the dip to be lighter, you can substitute more of the yogurt for mayo, but know that it will lose some of that silky, almost luxurious mouthfeel.
