# Method:
- Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery, sautéing for 5 minutes until softened and fragrant.
- Stir in minced garlic, diced zucchini or butternut squash, and green beans or kale. Cook for 3 minutes until vegetables begin to release their aromas.
- Add diced tomatoes, diced potato, and bay leaf. Cook for 2 minutes, then pour in vegetable broth.
- Bring the mixture to a boil over medium-high heat, then reduce heat to low and simmer for 15 minutes to allow vegetables to become tender and flavors to meld.
- Add drained cannellini beans and small pasta. Simmer uncovered for 10 to 12 minutes until pasta reaches desired tenderness and all vegetables are fully cooked.
- Season with dried oregano, dried basil, salt, and pepper to taste. Remove bay leaf before serving.
- Stir in chopped fresh parsley. Ladle into bowls and top with grated Parmesan cheese if desired. Serve with crusty bread and a drizzle of extra virgin olive oil.
